Diglycerides
Diglycerides are components present in mono and diglycerides. Mono and diglycerides are used in a variety of applications to improve texture and emulsify water and fat mixtures.
Mono and diglycerides with higher levels of diglycerides are used mainly in shortenings, especially those made from oil. These shortenings are used for bakery products such as Danish, pies, puff pastries, cakes and cookies, as well as frying shortenings for donuts and par fried applications.

Trancendim margarines and shortenings provide zero grams of trans fat, reduced saturated fat and a melt in your mouth texture for healthy baking. Trancendim is also labeled as mono di glycerides, allowing formulators to eliminate trans fat and hydrogenation from labels.
