Consumers have come to expect their food products to look, taste and behave in a certain way. Alphadim® distilled monoglycerides provide a wide range of benefits to food products including emulsification of fats, improved texture, reduced fat, improved mouth feel and increased shelf life. Alphadim® is a line of high purity monoglycerides that have been providing functionality in a variety of different applications and food products for 32 years.
Fully saturated monoglycerides are excellent starch complexing agents for use in cooked products containing starch; such as sauces, gravies, puddings, processed potatoes and similar products. They help to provide structure and mouth feel that consumers value.
Partially saturated monoglycerides provide similar benefits, but can be incorporated directly into foods at ambient temperatures providing benefits to manufacturing. Margarines and emulsified shortenings require the presence of emulsifiers to maintain texture. Unsaturated monoglycerides are particularly useful in low fat margarines while fully saturated monoglycerides are highly functional in higher fat products.
